Chicken
with Snow peas

Chicken breast, snow peas, dried mushrooms, bamboo shoots, garlic.

Cover mushrooms with warm water. Let stand 30 minutes, drain, discard stems. Slice thinly. Cut chicken in bite-size pieces. Marinate them in 2tsp. each soy sauce, cornstarch, dry sherry, water, dash white pepper and 1 tsp. salad oil for 15 minutes.
Prepare cooking sauce: water, dry sherry, soy sauce, ¼ sugar, 1
tbsp. cornstarch.
Remove ends and strings from snow peas. Drain
bamboo shoots.

Place wok over high heat. When hot add 2 tbsp. oil. Add garlic and
stir once. Add chicken pieces and stir-fry for 3 minute. Remove it from frying pan.

Add 1 tbsp. oil to wok. When oil is hot, add mushrooms, and bamboo shoots. Stir-fry for 1 minute. Add snow peas and stir-fry one more minute. Stir cooking sauce and add to pan, stirring until sauce bubbles and thickens.

Serve immediately
with hot plain rice.
