Ropa Vieja

 

2 large onions

2 pounds flank steak

6 cloves garlic

Water

1 large green bell pepper

2 medium tomatoes or

1 (15-ounce) can diced tomatoes

3 tablespoons olive oil

1 teaspoon dried oregano

˝ teaspoon ground cumin

1 ˝ teaspoon salt

1 bay leaf

˝ cup dry white wine

 

 

Cut 1 onion in half.

Place flank steak, ˝ onion and 2 cloves garlic in large saucepan

and add water to cover.

Bring to a boil and reduce heat and simmer covered until meat

Is very tender, about 2 hours.

 

Remove meat and allow to cool at room temperature.

 

 

Strain stock and reserve.When meat is cool shred and set aside.

 

 

Chop bell pepper, remaining onion and garlic.

Heat oil in large saucepan, add chopped onion, bell pepper, garlic

and sauté for about 10 minutes.

 

 

Add shredded meat, chopped tomatoes, cumin, oregano, bay leaf.

 

 

Add the reserved stock and the wine.

 

 

Cook over medium heat about 25 minutes.

 

 

 

Serve with rice or fried  plantains.
